Oh That Voodoo You Do

You know, I’ve NEVER had a cup of coffee.

Seriously.

I’ve never found the scent pleasing so I’ve never tried it.

Am I missing something?

Everyone I know has a cup in the morning, and some more often than that. I have to admit the hazlenut ones smell pretty good, yet not enough to tempt me…

Friends go on and on about coffee though. There’s a new one out on the market from

Fiber One Muffins

Yesterday, I made muffins from a mix.

EGAD! YES, a mix!

I know, who’d a thunk it?

I bought this Fiber One muffin mix because it was on sale and sounded good and thought Chili-man might like them. And I was right.

Extremely easy, of course, it was a mix afterall.

Just pour it in a bowl.

Stir it all up, pour into muffin tins (or cupcake liners like I did), bake and voila.

Easy as can be.

Bought Too Many Carrots?

I do that.

I buy that big old 5 lb bag at Sams thinking that YES, I’ll eat carrots and ranch as a snack every day. It works for a while, but one person trying to eat 5 lbs of carrots….. well, let’s just say you get tired of them….

Make carrot bread. It’s kind of like carrot cake only without that high calorie frosting..

Try it!

Carrot Bread

1/2 butter (softened)
1/2 c white sugar
1/2 c brown sugar
3 eggs
2 c flour
1 t baking powder
1 t baking soda
1 t salt
3 c grated carrots
1 c chopped walnuts (if you have them)

Preheat oven to 350. Butter a bread pan.

Cream the butter and sugars and beat until fluffy. Add in the eggs and beat well. Add the dry ingredients and fold in the carrots and nuts. Mix well. Pour into bread pan and bake for an hour or until toothpick inserted into center comes out clean.

Freezes well too!

Great as a dessert.

Great as a breakfast bread!

Teapot

Last year I bought my mom one of those cute little tea pot presses. It was a nice gift for a tea lover.

Another thing you can do for a ‘tea’ person is to buy lots of those little packs of different teas and combine them into a gift basket. Some green tea, some white tea, maybe some flavored teas… Cute! Sweet and thoughtful.

Add a cute little teapot, maybe a teapot cozy, and you’ve a gift for a queen, a tea loving queen.

Eat Cheap

Sometimes you just have to eat cheap.

Maybe your hours were cut this week, or you didn’t have as many clients. For whatever the reason, money was tight and there wasn’t enough to spend on your usual grocery tab.

You can eat cheap and still fill up your family.

Pancakes, hotcakes, and waffles are a great morning meal. They are very cheap to make. That is IF you don’t buy those mixes at the store. All you need are flour, milk, an egg, a pinch of sugar and baking powder. Even if you had to go buy these items, you’d eat for a week or more on less than what you’d spend for a pre-made breakfast.

I’ve a homemade faux maple syrup recipe in the archives and pancake recipes abound.

Know what my mother fed us instead of pancakes? I too, used to feed these to my kids, and then grandkids! We called them popovers, but in reality were really a kind of crepe.

To make these, you need an oiled skillet (or griddle), a cup of flour, a cup of milk and one egg.

That’s it. Just three ingredients. AND it can be mixed up in just a measuring cup. Less mess!

Mix it all up and pour into the skillet, about a 1/3 cup at a time (depending upon how big you want them and how big the skillet is). Cook until lightly browned, then flip over.

Serve with syrup.

Because these have no leavening in them, they don’t rise. This means it takes LESS syrup to enjoy them.

Use What You Have

The easiest way to be frugal is to use what you have on hand already.

For instance, the sour cream pancakes I listed today over under ‘recipes’ is a great example. I know, I know, you’re saying to yourself ” I don’t have all those things on hand.”

Well, that’s where a little thinking comes into hand. I’d venture a guess that you’ve thrown out sour cream before all because your family didn’t finish it off. You probably bought a container for baked potatoes and then it sat in the back of the fridge until you tossed it, am I right?

Using what you have would have caused you to create or find something else to make with the rest of the sour cream, like these pancakes!

But, what about buttermilk you say? WHO has butter milk on hand?

Did you know you can make your own buttermilk substitute for most any recipe that calls for buttermilk? Yes you can!

Take a cup of plain milk. Add a tablespoon of lemon juice OR vinegar and let it set for a few minutes. Ta da - buttermilk!

EASY Hashbrowns

I buy the big old carton of dehydrated hash browns at Sams. Yes, not as frugal as making hash browns from scratch BUT frugal in itself because:

No more potatoes growing eyes before I can use them up!!!

I measured out a cup of dehydrated hash browns and added two cups of water to the bowl. Then I nuked it. (Instructions say to add boiling water and let sit for half an hour.) (Who has half an hour???)

As soon as the potatoes have soaked up all the water you’re ready to cook.

Pre-heat a skillet with the fat of your choice, I’m using EVOO. Add the potatoes and let cook.

TRY not to turn them over until they start to get brown.

Once the bottom browns, flip them over and let the other side cook. Just takes a few minutes.

Add some scrambled eggs and maybe a side of fruit and you’ve got a quick hearty breakfast.

Chicken Cooking Temps

When cooking that ever versatile chicken be sure to pay attention to cooking times and internal temperatures. I think most seasoned cooks can do this without a thermometer but for beginners, it’s a good idea to pay attention. The chart below shows typical cooking times and internal temps. GET READY FOR GRILLING SEASON!

Hmmmm, we don’t have an outside grill. I do have a stovetop with a built in grill. Wonder if I could talk Chili-man into an outside grill? Wonder if I could get HIM to cook dinner? Hmmmm, probably not, can you cook chili on a grill?

What’s for Breakfast?

I made breakfast Sunday, and again it was hmm, lets look in the fridge.

I start out with mushrooms,

Then I chop some orange peppers

I sauteed the peppers and mushrooms a few minutes in the same skillet that I’m going to cook the eggs in. Just takes a few minutes. Then I slide them onto our plates, then crack some eggs.
