Blake’s food disappeared too fast for me to get a shot. So how about just the third basket of cheese biscuits?

The ‘last’ time we took Blake into Red Lobster he and his little cousin ordered the most expensive thing on the menu. He did a little better this time. But it was LUNCH and he ordered the steak.

Guess it’ll be another year or two before I let him back inside Red Lobster!

“Where” to Eat?

I had a whole car full the other day and everyone wanted something different when it came to lunch….

Chiliman wanted Furrs.
Miss J Did not!
Chiliman could do Chinese.
Daughter said no.
Mexican?
B can’t handle mexican…..

We ended up at Red Lobster. Now, I’m not a big fish person, but, we all have to make sacrifices….. I ordered the chicken sandwich!!!

“Sour” Cream

Today, while I was at work, well, I always think about what I’m going to cook for dinner. Today I decided that I’d use up the sour cream in the fridge and make Hamburger Stroganoff.

NO, not the box stuff.

From scratch.

Instead I had to choose something else.

The sour cream had gone sour.

Impossible?

Let’s just say it was spotted with green. YUCK CITY!

So instead, I’m cooking Sweet and Sour Hamburger over rice and no it’s not a box either!

It’s yummy and not a tad bit green!

It’s hot here in Oklahoma. No, I take that back, it’s HAWT.

So hot that ‘who’ wants to cook?

Chili-man decided he wanted to smoke some meat this past weekend. Fine by me, no heat coming from the kitchen.

‘Cept that means in and out, and in and out of the front door. Again and again…. Which in turn makes the dogs want to go out, and back in and out and back in… … It’s a vicious cycle.

But the meat got smoked!

Used up some of the fallen hickory.

Paired it with some cole slaw, and some navy beans.

Yum!

Honey I Cooked the Shrimp

Sometimes, it’s just TOO hot to cook inside. This week has been a scorcher! Time to dig out the shrimp out of the back of the deep freeze and get ready to throw some shrimp on the barbie!

Shrimp doesn’t have to be expensive. When you find shrimp on sale, buy it and stash it away in portion sized containers in your freezer. Then when the mood strikes, you’ll already have it on hand! That’s being money smart!

1 small bottle Italian salad dressing (NOT creamy)
1 c honey
1/2 t minced garlic (about 1 clove)
2 lbs shrimp (cleaned)

Combine the dressing, honey and garlic. Reserve about a half cup of the mixture for later. Put your shrimp into a gallon ziplock and pour in the marinate. Refrigerate overnite for best results.

Then heat up the grill, drain the shrimp off the marinade (and toss the marinade) . Grill the shrimp over medium heat for a couple minutes on each side and baste with the reserved sauce. Grill a few minutes more or until shrimp turn pink.

Canned Biscuits Nearing Expiration

What do you do when you have canned biscuits nearing expiration and well, your family just hasn’t been into biscuits lately?

You get the kiddos to make their own desserts!

My brother and I use to do this when we were little. My own kids enjoyed it too!

Take a can of biscuits and separate them. Take a plate and pour sugar on it - add a spoonful of cinnamon and mix it all up.

Then take the biscuit and flatten it out on the plate so that it gets the sugar/cinnamon mixture embedded all over it. Flatten them out like pancakes. Then cook as directed. It’s almost a ‘faux’ sopapilla!

Plethora of Zucchini

Over the next few days, I plan to share with you SEVERAL different ways of using up all that plethora of zucchini and crookneck squash that we’re all so blessed with this time of year.

This is merely a yellow squash sliced and sauteed in olive oil with a little chopped onion and a banana pepper.

It was SO good!!!

A Hundred Thousand Years Ago

A hundred thousand years ago, back when my daughter was just a little thing, well I was single then….. (long story) (long before Chili-man) and boy were times tight.

Back then, we frequently ate like college students. Oh, I fed her good, the skimping was on me!

I would buy a can of potted meat. Do you remember potted meat? Then I would buy the cheapest white bread in the store and those old fold up baggies, remember those? I would make FIVE, count ‘em, FIVE sandwiches out of one little tiny can of potted meat. Then I’d put them in the freezer.

Each day, I’d pack a frozen potted meat sandwich on white bread for my lunch. THAT was cheap, man. And now, I know that ‘gosh’ that wasn’t the best thing I could have eaten, but it sure was cheap…… Hmm, come to think of it, I was ‘thin’ then…

Today, the poor college student lives on ramen or boxed macaroni and cheese, unless they have their parents credit card!

It’s a wonder we survived!

Today, I’d be able to conjure up a much more decent meal plan at a very low cost, but I doubt I could get it as low as that can of potted meat and cheap bread….
