Around here, I have recipes galore.

A few of them call for alcohol.

Do you make dishes with alcohol all year long?  Or do you just save them for the holidays?

I’m most apt to save them, then use ‘those’ recipes for foods I’m taking elsewhere.  Chili-man doesn’t relish the idea of alcohol hiding in his food!

My favorite to add to a recipe?   It’s rum!

Did you know that Zacapa (a famous Rum manufacturer) began in 1976 in eastern Guatemala where the town of Zacapa celebrated its centenary and gave birth to one of the world’s best tasting rums? A true premium dark rum.

In the western part of the country, the terrain is perfectly suited to the cultivation of quality sugar cane. In fact, nowhere in the world could be better suited. For there in the rolling uplands of the green fertile landscape, acidic soils and prolonged periods of golden sunlight are the order of the day. The cane is grown here in volcanic soil, no less. However, unlike most rums which use molasses (a by-product of the sugar making process) as their base Zacapa premium rum uses only the concentrated first press of sugar cane, known as virgin sugar cane honey.

Then comes the ageing process. That takes place high up in the exquisitely beautiful Quetzaltenango highlands, 2,300 metres above sea level, where the cool mountain air slows the ageing process, creating a unique complexity of flavour. The House Above the Clouds is actually one of the world’s highest ageing facilities, and the process employed here, a unique Sistema Solera, is based on a process originally devised by the Spaniards 500 years ago to age sherry. It involves each drop of Zacapa rum passing through several casks that previously housed American whiskey, Oloroso sherry and Pedro Ximenez wines. So each of these large vessels imparts its own inimitable character that helps give Zacapa its distinctive taste.

More Veggies

I opened a can of sweet peas the other day and was surprised to see that the ‘best by’ date had long past.

We try to eat more veggies - I swear we do. The problem with the sweet peas is that Chili-man doesn’t eat them, so I tend to save them for a night when I’m making a veggie ‘he’ likes and I don’t. (Like brussel sprouts!)

I don’t really take stock in the new food ‘pyramid’ put out by the gov as I feel there are too much grains on there for the average person. They do however, have a nice big green bar for vegetables so they’re doing something right.

How can you squeeze more veggies into your meals?

You can always grind up veggies and incorporate them into a meat dish. Many a mom has hidden carrots, onions and peppers in a meat loaf! When I had kiddos at home, they wouldn’t eat anything with onions in it, unless I ran them through a grinder so where they were basically mush, then put them in the recipe. We got the needed flavor and they didn’t have anything to pick out!

These days, I try to be more open with my veggies. I don’t force veggies on anyone but I do tend to cook a little more closer to nature. Gone out of the pantry are the shortenings, gone are the corn oils, the canolas and the mixes. These days it’s just real butter, and organic EVOO (organic extra virgin olive oil) for this cook. I buy it in big jugs and keep it handy in the kitchen so that it’s easy to grab and use for just about any recipe.

So what is extra virgin olive oil? Simply stated, it’s the oil from the first pressing. This first oil from the olives is the freshest, delicate and filled with antioxidants. Olive oil is rich in monounsaturated fat a staple of the Mediterranean diet and well worth incorporating into your healthy lifestyle.

Preserving Eggs

I’d had this recipe forever - and I’ve yet to find ‘waterglass’ but I’ll share just in case you know where to find it.

To Preserve Eggs
1 part waterglass
9 parts water

Mix the two together and place the eggs in the container so that the eggs are covered with the liquid. Apparently waterglass is potassium and sodium silicate.

Emergency Faux Pedia-lyte type

You know sometimes you need this and it’s too far or too late to head to the store. This faux pedia-lyte type drink is easy to mix up at home.

1/2 t salt
1/4 t baking soda
1/2 c orange juice
2 T sugar
4 c boiled (cooled) or distilled water.

That’s it! Easy emergency liquid.

Impromptu Meal Changes

The best way to make use of a frugal budget and your frugal menu is to NOT be afraid of substitutions.

So what if you have no ‘white’ chocolate chips. Try plain ones.
So what if you’re out of onions, try a little garlic.
So what if you’re out of bell peppers, substitute another pepper or onion.

No Campbells cream of chicken? Use mushroom soup.

Sure, these things will change the taste of the dish, but maybe you’ll like this version even better!

Revoked Genetically Altered Sugar Beets

A federal judge has revoked the government’s approval of genetically altered sugar beets until regulators complete a more thorough review of how the scientifically engineered crops affect other food.

The ruling by U.S. District Judge Jeffrey S. White Friday means sugar beet growers won’t be able to use the modified seeds after harvesting the biotechnology beets already planted on more than 1 million acres spanning 10 states from Michigan to Oregon. All the seed comes from Oregon’s Willamette Valley.

Additional planting won’t be allowed until the U.S. Department of Agriculture submits an environmental impact statement. That sort of extensive examination can take two or three years.
