Angel Food Cake with Strawberry Sauce

Well, the best laid plans….

I got up early and donned some long jeans and sturdy shoes, started an angel food cake, then headed outside, ‘with the camera’ to pick blackberries.

Well.

It stormed heavy the night before.

The morning air was heavy. HEAVY in humidty.

I barely made it to the edge of the woods before I was dripping and the temperature gauge just reads low 70’s. WHEW.

Looks like most of the ripe berries were knocked off by the heavy rain and wind.

Hmmm.

Back to the house, blackberries will have to wait for another day…

I was planning on making a blackberry sauce to serve with the angel food cake. So, instead I dug some frozen strawberries out of the freezer and started making strawberry sauce.

First time I’ve ever made it.

I started out with a saucepan full of frozen strawberries and enough water to cover the bottom of the pan. Ideally your fruit would be fresh or at least thawed. I however, didn’t count on the weather messing with my plans! Only in Oklahoma!

I stirred the strawberries until they started to thaw, then started smashing them as I stirred. I added a half a cup of sugar to sweeten.

Then cooked and stirred until the mixture reached a boil.

Since I was in a hurry, I put the whole pan in the fridge to cool. (You really shouldn’t do this - it’s hard on your fridge.) (Necessity you know…) Then as soon as it cooled I poured it into my grandmother’s antique pitcher.

The cake with the sauce was lovely! And tasty!
