It’s hot here in Oklahoma. No, I take that back, it’s HAWT.

So hot that ‘who’ wants to cook?

Chili-man decided he wanted to smoke some meat this past weekend. Fine by me, no heat coming from the kitchen.

‘Cept that means in and out, and in and out of the front door. Again and again…. Which in turn makes the dogs want to go out, and back in and out and back in… … It’s a vicious cycle.

But the meat got smoked!

Used up some of the fallen hickory.

Paired it with some cole slaw, and some navy beans.

Yum!

Bad Bad Brownies

This has NEVER happened to me before. I had a failed batch of brownies.

I know what you’re thinking, man, you just can’t mess up brownies….

I was attempting blondies, (Brownies without cocoa) and that’s what I got! I also was trying out my new mini muffin pan. It was also EXTREMELY humid that day.

I decided that maybe I filled the holes too much. They raised, overflowed leaving great depressions in the middle. Worst yet, I had to scrape them out of my new pan….

I made two batches after that, in regular square pans and they were fine….. ……

It’s always an adventure in my kitchen!!

Honey I Cooked the Shrimp

Sometimes, it’s just TOO hot to cook inside. This week has been a scorcher! Time to dig out the shrimp out of the back of the deep freeze and get ready to throw some shrimp on the barbie!

Shrimp doesn’t have to be expensive. When you find shrimp on sale, buy it and stash it away in portion sized containers in your freezer. Then when the mood strikes, you’ll already have it on hand! That’s being money smart!

1 small bottle Italian salad dressing (NOT creamy)
1 c honey
1/2 t minced garlic (about 1 clove)
2 lbs shrimp (cleaned)

Combine the dressing, honey and garlic. Reserve about a half cup of the mixture for later. Put your shrimp into a gallon ziplock and pour in the marinate. Refrigerate overnite for best results.

Then heat up the grill, drain the shrimp off the marinade (and toss the marinade) . Grill the shrimp over medium heat for a couple minutes on each side and baste with the reserved sauce. Grill a few minutes more or until shrimp turn pink.

Vacationing Close to Home

More and more folks are deciding on a frugal vacation this year. They’re vacationing at home, near home, and within a day’s driving distance of their house. They’re camping, making great use of their backyards, and weekend renting for a little cottage holiday.

Some folks even just hang around the house on their vacation, cleaning, fixing up, tiling the floor….

Even if you can’t afford a cruise, or a trip to Disneyworld, maybe, you could afford a day trip to your nearest Six Flags, or other amusement park. Here we’re a good days drive from Branson, but it’s just half a day to Six Flags.

That ’still’ out of your budget? How about renting a cabin at the lake with friends? You could split the cost and bring all your own food and cook out the whole weekend long. Maybe you know some people with a place at a lake….

Still out of your range?

How about rediscovering your own hometown? I did that one year with the kiddos. We drove to downtown Norman, parked the car and walked down the street. Our goal was to go into every business and ‘discover’ our own town.

There was an art gallery, a couple of antique stores, some restaurants, a place that makes neon signs, a tattoo parlor (we just peeked in the window), a bar (we just walked quickly past). We learned alot about downtown Norman, the kids and I had a blast.

They still talk about it and it cost practically nothing!

Rediscover your town - pretend you’re a tourist in your own city, you might be surprised what you find!

More Canned Biscuits?

Still got MORE canned biscuits you don’t know what to do with?

Try Monkey Bread!

3 cans biscuits
1 c walnuts (optional but great!)
1 c raisins (I leave these out!)
1 t cinnamon
1 c sugar
1 c brown sugar
1/2 c butter

In a saucepan bring the brown sugar and butter to a boil and set aside. Put the white sugar and cinnamon in a gallon ziploc….

Meanwhile, cut each biscuit into four pieces and shake all the cut up pieces in the ziploc to coat. Then place the covered pieces into your pan of choice. (Bundts make pretty Monkey Bread). Sprinkle the nuts and the raisins on top. Pour the brown sugar mixture over the top and bake at 350 for 45 minutes.

Don’t CUT or SLICE - pick these apart with your fingers. Yummy and messy! What more could you ask for? :D

Canned Biscuits Nearing Expiration

What do you do when you have canned biscuits nearing expiration and well, your family just hasn’t been into biscuits lately?

You get the kiddos to make their own desserts!

My brother and I use to do this when we were little. My own kids enjoyed it too!

Take a can of biscuits and separate them. Take a plate and pour sugar on it - add a spoonful of cinnamon and mix it all up.

Then take the biscuit and flatten it out on the plate so that it gets the sugar/cinnamon mixture embedded all over it. Flatten them out like pancakes. Then cook as directed. It’s almost a ‘faux’ sopapilla!

Bought Too Many Carrots?

I do that.

I buy that big old 5 lb bag at Sams thinking that YES, I’ll eat carrots and ranch as a snack every day. It works for a while, but one person trying to eat 5 lbs of carrots….. well, let’s just say you get tired of them….

Make carrot bread. It’s kind of like carrot cake only without that high calorie frosting..

Try it!

Carrot Bread

1/2 butter (softened)
1/2 c white sugar
1/2 c brown sugar
3 eggs
2 c flour
1 t baking powder
1 t baking soda
1 t salt
3 c grated carrots
1 c chopped walnuts (if you have them)

Preheat oven to 350. Butter a bread pan.

Cream the butter and sugars and beat until fluffy. Add in the eggs and beat well. Add the dry ingredients and fold in the carrots and nuts. Mix well. Pour into bread pan and bake for an hour or until toothpick inserted into center comes out clean.

Freezes well too!

Great as a dessert.

Great as a breakfast bread!

Shredded Zucchini

Shredded zucchini can be used in most any muffin recipe. Try adding just a half cup to your favorite recipe.

You can also sneak shredded zucchini into many a dish. Think meat loaf, soups, salads…..

You can pan fry it like hash browns……

You can also FREEZE IT for use in cakes and muffins in the winter.

Squash - Raw

Yes!!!!

The first time I had squash ‘raw’ was in a pasta salad from a high-end bbq joint. DELISH!!!

Try that sometime. It adds a little something extra to your pasta salad and people will love it - and probably won’t be quite sure just ‘what’ it is! Just cube it up to about 1/2 inch size.

How else raw?

Slice them up into circles and use as dip chips….

Cut them into circles and top like you would a ritz cracker. Anything you can put on a ritz you can put on a squash circle.

Chunk ‘em up and toss them in your green salad.

Cube and add to soups….

Marinated in italian dressing! (Yum)!!!
