Medicine Cabinet Prepared?

It seems every time we get a few cool, damp, rainy days that someone in the house comes down with a cold.  Mom to the rescue!

I utilize Walgreen’s website to stay on top of my household needs.  Things I use all the time, well I just add them to my shopping list, then when next time I’m out of one thing, say bandaids, then I add the other items to my cart to check out.  That way I’ve always got a decent supply and am prepared for things like colds, bug bites, and sunburn.

Food Prices are Too High

I was at the grocery store the other day and was standing at the canned bean section looking for kidney beans (They go in Chili-man’s chili.) when I noticed an older gentleman stop and look at the beans too.

He started to pick up the ’store’ brand pintos when I saw him start. You know, PRICE SHOCK…. He was taken aback by the price.

That 16oz can of store brand pinto beans was 92 cents. NINETY TWO CENTS!

CRAZY!

He didn’t buy any.

I hope he had some still at home.

While I don’t expect that prices will get any lower anytime soon, I totally understand his thoughts on the price of canned goods.

By the way, did you know that the dried beans from the grocery store WILL GROW if you plant them?

Yes, buy a bag of beans (roughly a buck fifty) and plant them now. Plant them along a fence so they have something to grow up. Before you know it, you’ll be harvesting beans, and getting your monies worth.

More Veggies

I opened a can of sweet peas the other day and was surprised to see that the ‘best by’ date had long past.

We try to eat more veggies - I swear we do. The problem with the sweet peas is that Chili-man doesn’t eat them, so I tend to save them for a night when I’m making a veggie ‘he’ likes and I don’t. (Like brussel sprouts!)

I don’t really take stock in the new food ‘pyramid’ put out by the gov as I feel there are too much grains on there for the average person. They do however, have a nice big green bar for vegetables so they’re doing something right.

How can you squeeze more veggies into your meals?

You can always grind up veggies and incorporate them into a meat dish. Many a mom has hidden carrots, onions and peppers in a meat loaf! When I had kiddos at home, they wouldn’t eat anything with onions in it, unless I ran them through a grinder so where they were basically mush, then put them in the recipe. We got the needed flavor and they didn’t have anything to pick out!

These days, I try to be more open with my veggies. I don’t force veggies on anyone but I do tend to cook a little more closer to nature. Gone out of the pantry are the shortenings, gone are the corn oils, the canolas and the mixes. These days it’s just real butter, and organic EVOO (organic extra virgin olive oil) for this cook. I buy it in big jugs and keep it handy in the kitchen so that it’s easy to grab and use for just about any recipe.

So what is extra virgin olive oil? Simply stated, it’s the oil from the first pressing. This first oil from the olives is the freshest, delicate and filled with antioxidants. Olive oil is rich in monounsaturated fat a staple of the Mediterranean diet and well worth incorporating into your healthy lifestyle.

Simple and Delicious - Campbells Recipes

Do you know what one of my old favorites is? It’s a recipe that Mom made all the time growing up. It’s tuna casserole.

She probably made it because it was frugal, but I SO looked forward to meals with tuna casserole. I loved the creaminess, the feel of my tongue on the pasta, the warm smooth texture.

I continued the tradition, having that same tuna casserole once a week or so, for my own family.

Daughter called last week asking for the recipe! Some things just never go out of style!

The secret to the creaminess is a can of Campbells cream of mushroom soup.

I like to start my tuna casserole with a little chopped onion sauteed in some organic extra virgin olive oil. When the onions are translucent, I add in a can of albacore tuna, a can of Campbell’s cream of mushroom, a little shredded cheese, or velveeta depending upon what I have on hand, and cooked macaroni.

Our family likes the shell macaroni for this dish. Mom used to take hers, add bread crumbs to the top and bake for a few minutes to brown the crumbs. This casserole is good either way!

It’s a great last minute meal, as are the many different campbells recipes you can make when you have canned soup on hand.

Tuna casserole is so versatile. You can add a veggie like peas or broccoli. You can try a different shape of noodle or even exchange the pasta for rice.

I keep Campbells mushroom (and others) on hand. That way I can whip something up in no time!

Cream of mushroom is great cooked with pork chops, and just as good over rice and chicken. It’s a staple in quick chicken and rice. Great in a meatloaf recipe and great as a sauce base. I wouldn’t be without it in my pantry, and I’m not!

Little Things Can Save The Day
