Honey I Cooked the Shrimp

Sometimes, it’s just TOO hot to cook inside. This week has been a scorcher! Time to dig out the shrimp out of the back of the deep freeze and get ready to throw some shrimp on the barbie!

Shrimp doesn’t have to be expensive. When you find shrimp on sale, buy it and stash it away in portion sized containers in your freezer. Then when the mood strikes, you’ll already have it on hand! That’s being money smart!

1 small bottle Italian salad dressing (NOT creamy)
1 c honey
1/2 t minced garlic (about 1 clove)
2 lbs shrimp (cleaned)

Combine the dressing, honey and garlic. Reserve about a half cup of the mixture for later. Put your shrimp into a gallon ziplock and pour in the marinate. Refrigerate overnite for best results.

Then heat up the grill, drain the shrimp off the marinade (and toss the marinade) . Grill the shrimp over medium heat for a couple minutes on each side and baste with the reserved sauce. Grill a few minutes more or until shrimp turn pink.
