White Chocolate Chip Cookies

Nothing could be finer than to be in Carolina in the morning Well, except maybe Oklahoma where white chocolate chip cookies are a bakin’!!!

White Chocolate Chip Cookies

2/3 c butter
1 c sugar
2 eggs
1 t vanilla
1 3/4 c flour
1/2 t soda
1/2 t salt
1 t cinnamon
1 t ginger
3/4 cup chocolate chips
3/4 cup white chocolate chips

Cream the butter and sugar, add the eggs. Mix in the vanilla and flour followed by the soda, salt and spices. Stir in the chips.

Bake 8-10 min at 350 or until golden.

Sometimes I make these with all white and sometimes I mix it up - half and half is a good mixture for people that aren’t used to white chocolate. Still gives the ‘I want my chocolate’ people their little fix…

Crab Eggs

No - not really! Crab and eggs, deviled eggs to be exact.

Sometimes you like to use things up that have been in the pantry awhile… for me it was this lone can of crabmeat. WHAT do to with it?

AHA!!!

Crab Stuffed Deviled Eggs

6 boiled eggs
1 can crabmeat
1/2 c mayo
1/4 diced onion
1 1/2 t lemon juice
1/4 t seafood seasoning
1/4 t dry mustard
1/8 cayenne pepper
3 T parmesean

Cut the boiled eggs in half longways and put the yellows in a bowl. Take a fork and smash up the yellow part. Stir in everything else (well except the egg whites and the cheese).

Use a spoon (or you can get fancy and use a pastry bag, or a ziploc with the corner cut off - but i think that’s wasteful…) and fill the egg whites with the yolk mixture. Sprinkle with the parmesean. You’re done.

Deviled eggs NEVER last long around here - no matter what you fill them with!

Baked Stuffed Jalapeno

If you’ve ever had a stuffed hot pepper at a restaurant and loved it, well, you’re in for a treat. An similiar example would be the jalapeno poppers at Sonic!

This version is baked, so it has fewer calories….

Stuffed Jalapenos

couple dozen jalapenos
2 c cheddar shredded
1 t dried italian seasoning
8 oz softened cream cheese
3 eggs
2 T milk
Italian seasoned bread crumbs (in a large ziploc)

Cut the peppers in half. DON’T TOUCH YOUR EYES!!! Don’t touch your eyes for HOURS! LOL Stir together the cheese and the seasoning, then spoon into each half of pepper. In a bowl beat the eggs with the milk. Dip the stuffed peppers in the egg mixture. Then toss the coated peppers into the ziploc with the bread crumbs and shake to cover.

Place the peppers on a cookie sheet and bake at 325 for 30 minutes.

No one ever listens, but it’s best if you wear rubber gloves when handling hot peppers. The oil seems to penetrate your fingers and stays there for hours, even with repeated hand-washings. It will burn mucas membranes if touched.

Banana Bread

Banana bread makes a great breakfast bread, a snack bread and a dessert!

And the best part, you can use those bananas that are going fast!

Banana Bread

1 3/4 c flour
1 1/4 t cream of tartar
3/4 c baking soda
1/2 t salt
2 eggs
1/2 c butter
2 bananas
3/4 c sugar
1 t vanilla

Spray a baking loaf pan with Pam. Combine the flour, cream of tartar, baking soda and sale in a bowl. Add in the eggs, butter (room temperature) bananas (ripe), vanilla and sugar. Pour into pan and bake at 350 for 40-45 minutes or until toothpick inserted into center comes out clean.

Marinated Chicken Wings

Talk about tender!!!!!

Marinate chicken wings in the following overnight:

1/2 c soy sauce
1/4 c white vinegar
2 T brown sugar
pinch of ginger
dash of garlic

Bake at 350 for an hour on a lightly greased cookie sheet (with sides to avoid spills). Turn at the halfway point.

Recipe may be doubled or tripled.

Oatmeal Cookies

Another one of our favorite cookies.

1 c shortening
3/4 c brown sugar
3/4 c white sugar
1 egg
1/4 c water
1 t vanilla
1 c flour
1 t salt
1/2 t baking soda
1/2 t cinnamon
3 1/4 c oats

Cream shortening with sugars. Beat in egg, vanilla and water. Stir in the remaining items and drop by spoonfuls onto well greased cookie sheet. Bake at 350 until golden (about 15 minutes)

Makes about 5 dozen depending upon the size of your scoop…

Military Cookies

I know so many people these days ARE supporting our military troops and one of the ways is by shipping them packages.

But not everyone bakes anymore. Wouldn’t your soldier like to get a tin full of home baked goodness?

These cookies have been around for decades. They were a cookie shipped to troops a LOT of years ago - so they should still be a great cookie for shipping.

Military Cookies

2 c sugar
1 c butter
5 eggs
1/2 c milk
1 t vanilla
1 t baking soda
4 1/2 c flour

Cream the sugar with the butter. Add eggs and mix well. Add soda, mix then alternate milk and flour until it’s all mixed in. Chill several hours or overnight. Roll out onto floured board and cut with your favorite cookie cutters. Bake on lightly greased cookie sheet for 10 min at 350 (or until light brown)

They’re basically a sugar cookie. Wrap two back to back and place in a tin or box with lots of padding.

Biscuits from Down Under

A friend gave me this recipe - I sometimes make it when I have leftover coconut (but not too often - I’m trying to limit sweets in the house!)

Anzac Biscuits

1 c oatmeat
3/4 c flaked coconut
1 c flour
1 t b soda
1 c sugar
1/2 c butter (melted)
1 t syrup (or sugar)
2 t hot water

Mix oats, flour, sugar and coconut. In a separate container mix the soda with the hot water and add to the melted butter and syrup. Stir all together. Drop by spoonfuls onto greased cookie sheet and bake in a ‘low’ oven (about 160) for 20 minutes.

Different - It’s an old old recipe - used in Australia during WW1.

Leftover Rice Krispies

Got leftover Rice Krispies and don’t want another batch of Rice Krispie treats? Try these cookies. They’re great. The Rice Krispies give them a little unexpected crunch.

EVERYONE loves these!

Rice Krispies Cookies

1 c butter
1 c brown sugar
1 c white sugar
1 egg
1 c vegetable oil
1 t vanilla
1 t almond flavoring (can be omitted)
1 c flaked coconut
1 c oatmeat
1 c Rice Krispies
3 1/2 c flour
1 t baking soda
1 t cream of tartar
1 t salt

Mix all the ingredients in the order listed in a large bowl. Drop by teaspoonful on a cookie sheet. Bake 10-12 minutes at 350.

Makes a LOT!

Sausage Balls

These are a holiday tradition around here. The kids always want their sausage balls, and they’re SO easy!

1 lb hot bulk sausage (Jimmy Dean is a southern tradition) (or BLUE & GOLD sold by the FFA guys)
3 c bisquik
10 oz grated cheddar

Mix the raw sausage with the bisquik. Add the cheese and knead. Make small balls and bake at 350 for 15-20 minutes
