Parmesan Pesto

Yummy - oh so yummy on french bread - and it’s a great way to use up the basil that fills the flower bed!!!

Parmesan Pesto

2 T chopped parsley
1/2 c chopped baso;
2 T chopped onion
1 clove garlic
1/4 c parmesean
8 oz cream cheese
4 T butter

Blend first five ingredients. Add the cream cheese and butter (both room temperature). Put into a bowl and refrigerate.

Spread on french bread and broil 1-3 minutes or until edges just start to brown.

A good thing about this recipe is that you can add or subtract as need be. IF you were low on cream cheese - just substitute olive oil. Use jarred garlic instead of cloves. Mix and match to your hearts content - the end result will still be yummy!.

Whims at boutique hotels in san francisco

Suppose you were a big time blogger with your own cookbook, and cookbook tour…. (not me silly - the FAMOUS Oklahoman food blogger - the one, the only, the Pioneer Woman….)…. OK let’s pretend I’m that person. (OK so I aspire to be REE.) And, let’s say I was in San Francisco, the home of the California treat…. and staying at a fancy dancy hotel (not that there’s anything wrong with a motel…), what would I do?

I’d take advantage of all the amenities I could!

I could take in the fine dining at the hotel restaurant.
I could blog all night long on the wireless internet!
I could ask the concierge for something silly (try to stump her!!)

or I could just sit by the fireplace in the lounge and look for famous people entering the hotel… (Or I could use my imagination and pretend that everyone around me is someone famous….)

But, sadly, I’m sitting here in the middle of the country…. eating a grilled chicken salad I just made and sweltering in the oppressive Oklahoma heat.

Maybe it’s time to ‘consider’ a trip!!!

Little Axe Twister

So, what do you do when a twister comes and takes out your grocery store?

And the power is off. And there is NO water because the power is off (remember, we’re in the country)?

You barbecue…

YES. The ‘bad’ part of the storm didn’t last too long but knocked out power. So we cooked some chicken breasts on the grill, on the porch, with the rain coming down.

Heated up some leftover blackeye peas and added a side of coleslaw out of the fridge.

It was great!

After a couple of hours though we decided to drive out to see just how far the power outage was and boy were we surprised!

Not only was the grocery store completely gone, so was most of a church, several trailer homes, a few houses, TONS of big trees, the football stadium, the admin bldg at the Little Axe school and boats at the lake and many many power poles. There was also ’some’ damage to the cell tower.

So no phone either!

It pays to be prepared as much as you can. You just never know,

DIY Instant Soup

It pays to keep instant cream soup on hand. Many recipes either call for cream soup OR there are many things you can make ‘if’ you have cream soup on hand.

This do it yourself instant cream soup is a great pantry item. It stores well, mixes up well and tastes good!

INSTANT Cream Soup

2 c instant milk
3/4 c cornstarch
1/4 c chicken bouillon powder
1 t onion powder
1/2 t thyme
1/2 t basil
1/4 t pepper

Mix all up together and store in a glass jar or large ziplock. Use 1/3 cup of this mix to 1 1/4 cups water. Then use as you would any cream soup!

Kitchen Glasses

Over on Menu’s today I talked a little bit about my fantasy of having a different pair of reading glasses for each room in the house. Hey, it’s practical, especially once you reach the age where you need reading glasses for so many different things. Like reading a label.

LOL - I once cooked some pre-breaded chicken tenders for dinner that, well, they didn’t get done. WHY? Because I couldn’t read the darn bag! I took the bag out of the deep freeze and held it at arms length trying to read the cooking directions. What I accidentally did was cook them at the temperature that you were supposed to cook them at IF you had a convection oven.

Oh my. They really weren’t done.

After finding those darn glasses I went back to the freezer to re-read the bag. (Well after I checked to see if the oven was working….) and sure enough the ‘regular’ oven temperature was quite a bit higher than the temp you were supposed to use for the convection oven.

I’ve been cooking for DECADES! How could I make such a goofy mistake?

All because I couldn’t read the dad blasted label.

The solution is I need a pair of eyeglasses reserved for the kitchen. Hmmm, you know those chains that some ladies wear around their necks to hold their glasses? They’re similiar to the chains that banks use to keep their ink pens from walking off? How about a pair of reading glasses ‘chained’ to the deep freeze?

That would solve the prob!

Getting glasses online now is SO reasonable - you won’t believe how low the prices are until you go and look for yourself. Even in this economy you can afford an extra pair. Or two!

Spice Blend Substitutes

We can’t always run to the store when we need a spice blend. Keep in mind these easy substitutes - or an easy way to make your own!

Apple Pie Spice
2 TBS ground cinnamon
1 TBS ground nutmeg
1/2 TBS ground allspice
1/2 TBS ground cloves

Pumpkin Pie Spice
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon allspice
1/4 teaspoon ginger

Italian Seasoning
1/4 teaspoon oregano
1/4 teaspoon marjoram
1/4 teaspoon basil
1/8 teaspoon sage

Poultry Seasoning
2 TBS sage
1 TBS thyme
1 TBS marjoram
1 TBS savory
1/2 tsp ground black pepper
Pinch of cloves

Much easier! You probably already have these spices anyway - why duplicate by buying a spice blend when you can do it yourself?

Over on my ‘frugal menu‘ blog I mentioned being too busy to write and how sometimes people will utilize article directories for content.

Sometimes there’s another reason. Sometimes the content over there is just plain good. I’ve looked at article directories before and I was pleasantly surprised by the quality of Food and drink Articles over at article alley. Great content including down home recipes for those food blog editors that

have no help
are overwhelmed
too busy
lazy

LOL. Of course, I think you’d be able to tell if I had a guest poster, or used someone else’s work.

It’s a Nice Day for a White Wedding

The scene is Denver in November. Folks are arriving for the wedding. Snow is falling. Billy Idol rings in my ears.

Everything’s white. White dress, white flowers, white cake, white bows and blossoms, the white caps on the caterer, the white linens on the tables. The guests are drinking white wine and white tea. The cake is vanilla white, the chair covers are white satin, the centerpieces are white Akito roses. The bridesmaids are wearing pale blue dresses accented with white. The groomsmen are in white tuxes.

The white candles illuminate the stained glass of the church pulpit. It’s a real fairy tale wedding.

Later I asked the caterer about her tea recipe. She brewed white tea to which she added agave syrup and a dash of orange zest.
