Got Corn Pops?

Here’s how to use them up in something besides a cereal bowl!

Corn Pop Snack Mix

8 cups corn pops
1 c salted peanuts
2 c brown sugar
1 c butter
1/2 c corn syrup
1 t vanilla
1/2 t baking soda

Get out a BIG mixing bowl and combine the peanuts and corn pops.

In a saucepan combine the brown sugar, butter and corn syrup and bring to a boil over medium heat. STIRRING ALL THE TIME. Boil for FIVE minutes. Once it starts to boil, you need to stir, just not as often.

Take from the heat and stir in the vanilla and baking soda. IT WILL FOAM UP!

Pour over the cereal in that big bowl and stir to coat.

Then spread it out on two long jellyroll pans or a cookie sheet with sides (to keep it from falling off). Bake at 250 for an hour, stirring every 15 minutes or so. Allow to cool.

Makes a WHOPPING 14 cups!
