A friend gave me this recipe - I sometimes make it when I have leftover coconut (but not too often - I’m trying to limit sweets in the house!)
Anzac Biscuits
1 c oatmeat
3/4 c flaked coconut
1 c flour
1 t b soda
1 c sugar
1/2 c butter (melted)
1 t syrup (or sugar)
2 t hot water
Mix oats, flour, sugar and coconut. In a separate container mix the soda with the hot water and add to the melted butter and syrup. Stir all together. Drop by spoonfuls onto greased cookie sheet and bake in a ‘low’ oven (about 160) for 20 minutes.
Different - It’s an old old recipe - used in Australia during WW1.
